Lemon Blueberry Coffee Cake (uh, Cobbler)

I kinda mixed this recipe up a little which could be the reason why it turned out to be more of a cobbler than a cake. Hmmm. Perhaps I put too many blueberries in there. Even though it doesn't look that great, it tastes delish, thank goodness. I never know how my "recipes" are going to come out. Sometimes, I think I experiment a little too much. This time, all the blueberries fell to the bottom (top) of the cake and then stuck to the pan. Oh well. I did use a "carved" loaf pan which may be the reason. Perhaps a flat bottom loafer would have worked better. Geesh. Live and learn.

I had the kid take the "cake/cobbler" next door for them to dig into, one miniature loaf for my mom to enjoy, one for us and the kid ate the blueberries that were sitting on the bottom of the pan. We still have birthday cake in the house, so the hub and I don't need any more sweets, please!! Perhaps you know what to do to make the blueberries "float" as the cake cooks. Lord knows I don't! Don't know if I would suggest this for company, but it sure is good for family (and good friends).

Lemon Blueberry Cake/Cobbler

  • 2 C flour
  • 3/4 C sugar
  • 1/2 C brown sugar
  • 2 t baking powder
  • 1 t salt
  • dash of cinnamon
  • 1 C milk or buttermilk (I was out of milk so I mixed some buttermilk)
  • 1/2 C softened butter (1 stick)
  • 2 eggs slightly beaten
  • 1 t vanilla
  • dash lemon extract or 1 1/2 t grated lemon peel
  • 2 cups fresh blueberries (too much, I think)
Combine first 6 ingredients. Add butter and mix with pastry blender or fork. Add milk, eggs and extracts. Blend well. Pour 3/4 into 13 X 9 pan. (I used a loaf pan and two miniature loaf pans.) Add blueberries. Spoon rest of batter over blueberries. Bake at 375 degrees (f) for 30 minutes or until done. Let cool in pan for 30 minutes and then good luck getting it out in one piece!


Ya see what I mean? I told you I'm definitely not a baker!! The proof is in the cake pudding (with cake on top)!

(Edi, if you read this and the "thing" was horrible, don't tell me!! hehe)

Looks yummy as a cake or a pudding..or cobbler. If its any comfort, Rachel Ray says she doesn't bake either. But this looks wonderful to me!

It does look good too. It also prompts me to ask if you can solve one of the great culinary mysteries of all time. "How do you stop the glace cherries from sinking to the bottom?"

I have been known to bake the odd cake or two in my time (he said in a gruff macho voice). I tried dusting them in flour first or rinsing them to get the syrup off but they still refused to distribute themselves evenly throughout the cake.

I blame Mr Newton and his gravity!

I think it looks yummy. I`m a baker wanna be. Try to bake something each week and sometimes they turn out and sometimes not. The other night I baked some light and fluffy bread. Greased and floured up the pans just right. Well it was nice and light and fluffy. I had to pry it out of the pans.It said to paint egg whites on the top. Didn`t mention to beware of the egg white sliding down inside the pan. Ended up being about a foot tall almost.

Your "cobbler" look very nice, in my opinion! I would it a piece of it at any time...

Generally, to prevent the fruits from falling to the bottom, one should coat them with either sugar or flour. Are you sure your cake mixture wasn't too thin? It could explain the blueberries at the bottom...

In any case, we all have our "flops"; nobody's perfect!!!

I will be trying that for a family weekend or some other summer event.

We always pick or buy 10-20# of blueberries every summer.

I'll trade ya a slice of my blueberry pie for a bowl of your blueberry cobbler!!! No matter that it didn't turn out like you thought it should, it still looks very yummy. I've been baking since I was a little girl and the comment Rosa's Yummy Yums made about coating the berries with flour and making sure your batter wasn't too thin is what I would have suggested. Could also try cutting it down to 1 cup of blueberries and see if that makes a difference.

Oh me oh my this looks scrumptous! Wish blueberries grew in Kansas! I always dust the fruit too...wonder how this would be with grapes? Got 2 acres of those...or sand plums? You are a fab cook!!!!

Hey blueberries? I grow blueberries and got a hoot this past Feb when adding varieties...went to the nursery and sought out the blueberry section started pulling the varieties I wanted along comes this guy to help me gosh what was his name, Nate Nathaniel it was something interesting anywho I tell him I want 25 berries and what varieties I'm looking for he pulls them over and tags them for delivery to the island so then I get him to help me pick out a couple trees I'm adding to the grove, he tags these too and writes me up a ticket to set up delivery and pay at the office... off I go to the sales counter give the ticket over and the clerk rings me up the trees and then punches in blueberries but she needs to know what quantities my varieties selected are so she get on the intercom out to the garden center and ask Nate to inventory my order and call back so he takes a few minutes to do this while I visit with the clerk about gardens and retail life since I work down the street etc then over the intercom comes Nate's voice with my order 5 evergreen 5 sharps 10 millenia ...5 gulf coast and I'm like that’s' not right I didn’t want the sharps I wanted climax where is the climax? So before she realizes what she is saying over the intercom out to the garden center goes the clerk saying Nate the lady here wanted a climax, she wants to know what happened to her climax? The whole store is giggling the older woman standing in line behind me says "I maybe old but I got my climax this morning I'd want it too"...

Nate laughing calls back with o boy I was wrong I'm holding a couple climax for delivery to the island for special delivery on Thursday

I lived in Nashville...went to k,1,2 grade there before moving to DE where my brother traumitzed with the battery acid story... went to mcgavock elementary is it still there? I went over the hill in front of that school on a sled and dropped onto the road because I didn't turn...scared the beezzies out of my Daddy
