Din Din

The boys are coming home tonight from France so I made an all-American meal for them! Chicken Pot Pies!

Mom and I sat in the kitchen this morning scouring over cookbooks deciding what to make for them on their homecoming. It was between baked fried chicken, fried chicken, stuffed chicken or chicken pot pie. Chicken pot pie came up a winner by this afternoon as it was the easiest. I lost my day somehow; and you know it takes just about all day to fry up some good chicken.


I decided against making one big pie figuring the kid, the hub and I could do some damage to one leaving the rest for the teenager--whenever he dragged himself in tonight--to finish up. The other I will freeze. It didn't call for a pastry shell, but I like mine with a shell, so I bought the frozen sort. Then I covered it with a puff pastry (again frozen). Looks good.

I also decided to do an "American" dessert. The S'mores Ice Cream Pie sounded good to me! Line your loaf pan with plastic wrap. Then take graham crackers, smear them with fluffer stuff (the marshmallow cream), then cover with a pint of chocolate ice cream (melted and stirred to soft consistency), another layer of fluffer-smeared crackers, cover that with vanilla ice cream (again stirred to soft consistency) and then top it off with some more fluff and crackers and cover with more plastic wrap. Freeze for 6 hours and you're good to go.

Slice.

Of course, I had to make some chocolate sauce to be poured over top! We are Americans, right? No wonder we're so fat over here!!

Drizzle.

And then get ready for bed. Oooooof!

I agree that it does take a good chunk of time to fry up a decent chicken. Also, I am having difficulty here finding a butcher to cut up a whole chicken for me to fry, rather than package just wings or other parts of the bird. I have been meaning to fry a chicken for a week or two.

Every thing looks lovely. Was hoping I would hear back from the e-mail I sent you Tuesday but I am sure your busy with all your fellas back home again. Hope you have a fun time at Riverside. Maybe I will get to see ya sometime this summer.
